Fresh salsa made with Colorado’s juicy Palisade peaches and other fresh ingredients makes a perfect late summer snack. Add a bag of fresh tortilla chips and you're ready to go!
Here's the recipe:
4 Cups Palisade Peaches (about 4 peaches), chopped
2 TBS Cilantro, finely chopped
2 Jalapeno Peppers, finely chopped
1/4 Cup Red Bell Pepper, chopped
1/4 Cup Red Onion, chopped
1 TBS Lime Juice
2 tsp Olive Oil
Pinch of Salt, to taste
Pinch of Black Pepper, to taste
Pinch of Cayenne Pepper, to taste
Prep Time: 15min
Wash and chop all fruit and vegetables
Combine vegetables with chopped peaches and remaining ingredients, and toss to combine evenly
Enjoy with your favorite tortilla chips!
